Slow Cooker Chow Mein

6 boneless skinless chicken thighs
2 cups broccoli florets
1 cup snow peas
1 cup thinly sliced carrots
1 red pepper
1 can water chestnuts, thinly sliced (https://amzn.to/3QMCOoP)
2 cups bean sprouts
dry chow mien noodles
Sauce:
1/3 cup soy sauce (https://amzn.to/43pBCPU)
2 tbsp brown sugar (https://amzn.to/41FxZE2)
1 tbsp oyster sauce (https://amzn.to/3F6El6t)
1 tbsp grated fresh ginger
4 cloves garlic, minced
1 chipotle pepper, minced (https://amzn.to/4irLkoV)
2 tsp sesame oil (https://amzn.to/4kkh0i1)
Place the chicken in the crock pot (https://amzn.to/3QLwMow).
Mix together all of the sauce ingredients until well blended. Pour over the chicken in the crock pot and stir until chicken is well coated. Cook on high for 3 hours.
Break the chicken into pieces then add the broccoli, snow peas, carrots, pepper, and water chestnuts to the pot and cook for 30 minutes to 1 hour on high or until the vegetables are tender.
Add the chow mein noodles and bean sprouts. Cook on high, mixing the noodles into the sauce as the soften. This will take about 1/2 hour. Enjoy!!
