3 large russet potatoes, cubed
1 pound ground turkey *
1 1/2 cups frozen peas
3 carrots, diced
1/2 onion, diced
1 1/2 tsp Worcestershire sauce (https://amzn.to/3wLf0LD)
1 tbsp flour
1 1/2 cups chicken broth (https://amzn.to/4ayQFGP)
1 tbsp ketchup
1 tsp garlic seasoning (https://amzn.to/4ay4F3F)
1 1/2 cup grated cheese
Bring a pot of salted water to a boil/ Add potatoes and cook for approximately 15 minutes until tender.
Meanwhile, cook carrots, peas, and onion in a 12 inch frying pan (https://amzn.to/4dS0Jxl) until tender, approximately 5 minutes. (You can use any vegetables you like. I just use up what I have in my fridge and add frozen peas) Add ground turkey and cook until no pink remains. add the chicken broth, worcestershire, ketchup, garlic, and flour. stir well. I make my own chicken broth using chicken bouillon base and water. The cubes keep longer than the liquid broth once opened.
Once potatoes are cooked, remove from stove. Add a tbsp of margarine and 4 tbsp milk. Mash well. Mix in half of the grated cheese
In individual sized ramekins (https://amzn.to/4dTRqwQ), fill half full with the turkey mixture. Add a sprinkle of grated cheese. Cover the meat sauce with mashed potatoes and bake at 350 for 15 - 20 minutes or until potatoes are browned. These freeze well and because they are in individual portions you only need to take one out of the freezer if that is all you need.
*Any ground meat can be used for this recipe. I used ground turkey because I got it on sale. If you use ground beef, change the broth to beef broth.
