Roasted Chicken

For Stuffing:
3 cups bread pieces
1/2 cup margarine
1 stack celery
1/2 onion
1 tbsp poultry seasoning (https://amzn.to/4aUXJxn)
For Chicken
1 or 2 whole chickens
salt and pepper
This is the easiest meal to make and has the most possibilities with the leftovers!!!
For stuffing, melt margarine in a frying pan, add chopped up celery and onion as well as the poultry seasoning. Cook for 2 or 3 minutes. Pour margarine mixture over bread pieces (I freeze all of the crusts no one eats and use these!) and mix well.
Place the chicken(s) in a 9 x 13 pan (https://amzn.to/3yMkIxn) with some water in the bottom. Pat the stuffing into balls and stuff the chicken. Sprinkle salt and pepper on the chicken and bake at 350 for approximately 2 hours.
You can add some cut up potatoes and carrots to the pan and cook with the chicken for a complete meal in one pan. The leftovers can be made into chicken a la king and chicken soup (recipes to come). My favorite meal to make!!!
Make a loaf of cornbread to go with it and your all set!!
