2 cups flour

2 1/2 tsp baking powder

3/4 tsp salt

1/4 tsp baking soda

1/2 tsp nutmeg (https://amzn.to/4eqYh16)

2 tsp cinnamon (https://amzn.to/3RvQYLY)

1 egg

3/4 cup brown sugar

1 cup canned pumpkin (https://amzn.to/3xjIeS8)

2/3 cup milk

3 tbsp melted margarine

1 tsp vanilla (https://amzn.to/4eu0BEw)

1 cup chocolate chips (https://amzn.to/4c3MEvw)


In a large bowl combine flour, baking powder, baking soda, salt, and all of the spices.


In a separate bowl, combine egg, brown sugar, pumpkin, milk, margarine, and vanilla. Stir wet ingredients into dry ingredients just until blended. Fold in chocolate chips.


Grease a 12 cup muffin tin and fill the cups with batter. Bake at 350 for 20 minutes or until a toothpick inserted in the center comes out clean.


I put these into individual sandwich bags and into the freezer so I can take one out each day for my lunch and it is perfectly thawed by lunch time!! Great for the kids (or grandkids) lunches too.
