Potato Poppers

2 cups cold mashed potatoes

1/4 cup chives

1/2 cup cooked, chopped bacon

cubes of cheese (approximately 16)

*1 egg beaten

*1/3 cup flour

*1 cup breadcrumbs


Mix together mashed potatoes, chives, and bacon. Scoop out a ball of potato, flatten, add the cube of cheese and fold the potato back around it and into a ball. Continue until potato mixture is used up.


At this point you have two options. You can cook them as is in an air fryer (https://amzn.to/3y1DfFV) and enjoy.

*or you can roll them in flour, then beaten egg, then breadcrumbs and place in the freezer for at least an hour. Once frozen, they can be deep fried (https://amzn.to/4cKa6y2) until golden brown and served.


This is a great way to use up leftover mashed potatoes. You can make the poppers after dinner and place them in the freezer to be deep fried tomorrow, or leave them in the fridge and air fry them with no batter for a side dish the next night.
