1 package of bacon
5 large potatoes
1/2 onion
4 cups chicken broth (https://amzn.to/3VSQPnc)
1 tsp brown sugar bourbon spice (https://amzn.to/3XFGwFt)
1 tbsp Worcestershire sauce (https://amzn.to/3XJ9Tqe)
green onion for garnish
Cook bacon in a 6 quart saucepan (https://amzn.to/45KXLad). While the bacon is cooking, chop the onion and potatoes. When the bacon is crispy, remove it from the pot, but leave the drippings. Fry the onion and potatoes in the pot of bacon drippings for about 5 minutes. Add the chicken broth and bring to a boil. Add the seasoning and Worcestershire sauce. Cook until potatoes are tender.
Once the potatoes are soft, remove the pot from the heat and blend with an immersion blender (https://amzn.to/3XJ9qV0). Add the bacon at the end and serve. This soup goes well with cornbread.
