One pot taco noodle casserole

2 cups pasta
1 pound ground turkey
2 tbsp taco seasoning (https://amzn.to/3WYIjV7)
water
1/2 red bell pepper, diced
2 tomatoes, diced, or 1 can of tomatoes*
green onion, sliced
2 cups grated cheddar cheese
Cook pasta according to package directions.
In a large frying pan (https://amzn.to/46PF59V), cook ground turkey and bell pepper. add the taco seasoning and about 1 and 1/2 cups water. Bring to a boil and let the sauce thicken. Once slightly thickened, add the cooked noodles, tomatoes and green onions. Mix them in and then add the grated cheese on top. Cover and let the cheese melt before serving.
You can use any ground meat for this recipe. I use ground turkey or chicken ONLY because it is less expensive in our grocery stores.
*I use a package of my frozen tomatoes. I never learned how to can, so everything from my garden gets frozen. I also buy the discount vegetables at the store and freeze them right when I get home. The tomatoes I don't cook, but any other vegetable gets blanched before freezing. The frozen tomatoes taste just like canned. They are great for sauces and soups and they work well in this recipe. Save money where you can!!!
