Home made Gnocchi

8-10 large potatoes (I used russet)
2 cups flour
1 egg
3/4 tsp salt
3/4 tsp pepper (https://amzn.to/40D08eG)
Peel and boil potatoes until tender. Drain and mash with a fork into course crumbs. Let cool slightly so they can be worked with. Once cooled, place on the counter. Add the flour and seasonings. Make a well in the middle and add the egg. Mix well until no longer sticky, but still moist. A little more flour can be added if necessary.
Once mixed well, separate into about 8 pieces. Roll each piece into a log shape about 3/4 inch round. Slice into 1/2 inch slices and carefully place in a pot of boiling water (https://amzn.to/48GYhHL) a few at a time so they don't stick together. Stir so they don't stick to the bottom of the pot. Once they float to the top let cook for a minute or 2 longer, Then drain. They can be eaten as is or you can fry them in some butter so they get a crunchy outside layer. Both ways are delicious. (We used ours in bacon gnocchi soup....recipe to come!!)
