Ground Turkey Casserole

1 pound ground turkey or chicken
1/2 onion, diced
1 1/2 cups sliced mushrooms
1 red bell pepper, diced
3 cups cubed yellow potatoes

1/4 cup margarine
1/4 cup flour
1 cup milk
1 1/2 cups beef broth (https://amzn.to/3C7gS42)
1 cup sour cream
1 - 2 cups grated cheese
Cook the ground turkey in a large frying pan (https://amzn.to/40qzbKS). Add the mushrooms, onions, and peppers and let cook slightly. Add the potatoes and Worcestershire. Mix well.
In a medium saucepan (https://amzn.to/40tRCOK), melt the margarine. Add the flour and cook for about 2 minutes. Add the milk and beef broth and let cook until it thickens. Add the sour cream and mix well.
Place the meat mixture into a large casserole dish (https://amzn.to/4fWfz5E). Pour the sauce over top and blend slightly. Add grated cheese to the top and bake at 350 for about an hour or until the potatoes are tender. Enjoy over rice or noodles!!
