French toast with cherries

1 cup chopped fresh cherries

2 tbsp sugar

2 tbsp water

1 tsp margarine

4 eggs

1/4 cup milk

4 slices white bread

Place the chopped cherries, sugar, and water in a small saucepan https://amzn.to/4ctNj9c . Bring to a boil stirring occasionally. Turn down heat and let simmer while preparing the french toast.

In a shallow dish (I use a tin pie plate) mix together the eggs, vanilla, milk, and cinnamon. Heat a large frying pan https://amzn.to/3VyPCAW over medium high heat. Melt margarine in pan. Dip a slice of bread into the egg mixture. Turn it over so both sides have egg on them and place in the frying pan. Cook for approximately 1 minute on each side. Repeat with the remaining slices of bread.

Place ccoked french toast on a plate and top with a spoonful of the cherry mixture. Sprinkle icing sugar on top if desired.

I used cherries because they were ready to pick from my tree, but any fruit can be used. You can even use frozen fruit if it is cheaper or more convenient. (Once my cherries are all picked, they will get frozen and used in a similar way!!) Mix it up and enjoy!!!
