3 chicken breasts, cut up
Red cabbage, sliced thinly
1 onion, chopped
Teriyaki sauce
Teriyaki sauce:
1/3 cup soy sauce (https://amzn.to/4gAuiF6)
3/4 cup water
1/3 cup brown sugar (https://amzn.to/3ZAYnOQ)
1 tsp red wine vinegar (or rice vinegar)
1 tsp garlic powder (https://amzn.to/3BctNke)
1 tsp ground ginger (https://amzn.to/3zw9yNZ)
1 tbsp honey (https://amzn.to/47Fv3Zs)
For the sauce:
Add all ingredients to a saucepan (https://amzn.to/3TFtEwg). Heat to boiling. Add a cornstarch slurry (1 tablespoon cornstarch in 1/4 cup water) and boil until thickened.
(If you don't have cornstarch you can use some flour to thicken it as well, but the cornstarch works better!!)
Cook the chicken in a large frying pan (https://amzn.to/3XF5u6g). Add the red cabbage and onion and cook until tender (about 5 minutes) Add the teriyaki sauce and serve over rice.
You can use whatever vegetables you have in the fridge or freezer and adjust the cook time until those veggies are tender.
Quick and simple meal for a busy night!
