Creamsicle Cheesecake

Crust:

1 3/4 cup graham crumbs (https://amzn.to/4dPqOM8)

4 tbsp margarine, melted


Filling:

1 box orange jello

1 cup boiling water

2 boxes cream cheese

1 1/4 cup powdered sugar (https://amzn.to/4dNOpNs)

1/3 cup plain greek yogurt

3 tbsp heavy cream

2 tbsp orange juice

1 1/2 cup whipped topping


Mix together the graham crumbs and margarine and press onto the bottom of a pie plate (https://amzn.to/3BYOIaM). Place in the fridge until ready to use.


Prepare the jello by adding one cup of boiling water and stir until dissolved. Set aside, but do not refrigerate.


Beat the cream cheese until completely smooth. Beat in the powdered sugar, yogurt, cream, and orange juice until light and fluffy. (We used an immersion blender (https://amzn.to/4e5Aoel) for this step)


Fold in the whipped topping until combined.


Mix 1/3 of the cream cheese mixture into the jello until combined. Set aside.


Spread 1/3 of the cream cheese mixture carefully onto the crust. Pour the jello mixture on top. Dot the remainder of the cheesecake mixture onto the top of the jello. (We used an icing tool (https://amzn.to/3BQEmdm) for this step).


Place in the fridge until set. It is best to make this the day before and let set overnight.


Slice and top with whipped cream if desired. Enjoy!!


*You can use any flavor of jello if orange is not your thing!! Just omit the orange juice and add another 2 tablespoons of cream or a juice to match your jello flavor.
