Cornbread Pie

1 pound ground beef
1 pound ground pork
1/2 cup diced poblano peppers
1 tsp steak spice (buy here https://amzn.to/4h1C4HO or make your own, recipe on this site)
1 tsp garlic powder (https://amzn.to/40uWpOy)
1 tsp chili flakes (https://amzn.to/40yP014)
1 1/2 cups frozen corn
1 1/2 cup grated cheddar cheese
1 1/2 cups grated pepper jack cheese
Cornbread mix:
1 cup cornmeal (https://amzn.to/3Cj7KJH)
*1 1/3 cups buttermilk
1 cup flour
1/4 cup sugar
2 tsp baking powder (https://amzn.to/3EgtiHm)
1/2 tsp baking soda (https://amzn.to/3PMUGPV)
1/2 tsp salt
2 eggs
1/4 cup melted margarine
Cook the beef and pork in a large frying pan (https://amzn.to/42kPFWj) adding the spices and poblano peppers once mostly cooked. Drain the fat and set aside.
Prepare the cornbread: Mix together the cornmeal and buttermilk in a large bowl. Stir and set aside to sit for 5-10 minutes. In a medium bowl (https://amzn.to/40rKn8X) mix together the flour, sugar, baking power, baking soda, and salt. Add the the cornmeal mixture along with the eggs and melted margarine until combined. Set aside.
In a large, greased casserole dish (https://amzn.to/3WtIp6G), spread a layer of the cornbread dough (use half of the batter). Cover with 3/4 cup of frozen corn and a third of each of the grated cheeses. Top with half of the ground beef mixture. Repeat the layers once more then end with a layer of grated cheese on top. Bake at 350 for 45-55 minutes or until the cornbread is cooked. Enjoy!!
*Buttermilk can be made by mixing a tablespoon of vinegar into the milk.
