Cookie sheet tacos

2 pounds ground beef
1 onion, chopped
2 packets (1/3 cup) taco seasoning (https://amzn.to/48etXUU)
2 cups water
16-18 soft tortilla shells
4 cups shredded cheese
Pico de Gallo (recipe below)
Cook the ground beef in a large frying pan (https://amzn.to/3BT0lQy) until no pink remains. Add the taco seasoning and water and let simmer until the sauce has thickened, Meanwhile, get a cookie sheet (https://amzn.to/4eLyOzo) ready by spraying with non stick spray. Cover the bottom of the cookie sheet with tortillas making sure they overhang the sheet by about 3 inches on all sides.
Place the cooked meat on top of the tortillas. Sprinkle the onions over top and cover with the cheese. Place more tortillas on top to cover the meat mixture and then fold up the sides of the over hung tortillas to the middle. Place a second cookie sheet on top of the tortillas, add a heavy oven safe casserole dish or cast iron pan to press down the tortillas and place it in the oven for 30 minutes. Remove the top cookie sheet after 30 minutes and place back in the oven for another 20 minutes.
Remove from oven and let cool for 5 minutes before cutting into squares. Serve with sour cream and pico de gallo. Enjoy!!
Pico de Gallo:
1/2 Onion
1 Jalapeno pepper
1/2 Tomato
3 tbsp chopped Cilantro
1 tbsp Lime juice
1 tsp Sugar
1/2 tsp Salt
Cut all of the vegetables and cilantro into very small pieces and place in a bowl (https://amzn.to/4h6MpTu). Sprinkle with sugar and salt. Add lime juice and mix. You can adjust the lime juice, sugar and salt to your liking. Place it in the fridge for 1 hour before serving for best flavour.
