Chocolate Coffee Muffins

1/2 cup margarine (melted)
1/2 cup sugar

2 eggs
1 tbsp strong brewed instant coffee
2 tsp vanilla (https://amzn.to/4adBa8p)
1 1/3 cup flour
2/3 cup cocoa (https://amzn.to/4j2D4Nr)
1 tsp baking soda (https://amzn.to/4fSL7JZ)
1 tsp baking powder (https://amzn.to/408KIgs)
1 tsp instant coffee powder
3/4 tsp salt
*1 cup buttermilk
3/4 cup chocolate chips (https://amzn.to/4h4Jslp)
In a large bowl (https://amzn.to/3W8xKyb) mix the margarine, sugar, brown sugar, eggs, brewed coffee, and vanilla.
In a separate bowl mix together the flour, cocoa, baking soda, baking powder, coffee powder, and salt.
Alternate mixing the flour into the margarine mixture and the buttermilk. Mix just until combined. Fold in chocolate chips.
In a greased muffin tin (https://amzn.to/3WcouZS), fill 3/4 full with batter. Bake at 350 for 15 minutes or until a toothpick comes out clean.
These freeze well for lunches and are a great snack!!
*Buttermilk can be made by whisking 1 tablespoon of vinegar into the cup of milk.
