Cheesy Broccoli Balls

1 bag frozen broccoli florets

1 cup grated cheddar cheese

4 slices Swiss cheese, cubed

2 slices American cheese, cubed or 1/3 cup cubed Velveeta

1 tsp bell pepper seasoning (https://amzn.to/3YL3YkZ)

3 eggs

2 cups Panko breadcrumbs (https://amzn.to/3AqkVr1)

1/2 cup flour

vegetable oil


Thaw and drain the frozen broccoli and cut the florets into small pieces. In a large bowl (https://amzn.to/4fNvAMr) add the grated and cubed cheeses, the broccoli, and the seasoning. Mix well. Add 1 egg and mix again. Form the broccoli mixture into balls and place in the freezer for about 1 hour.


Place 2 beaten eggs in one bowl, the flour in another, and the Panko breadcrumbs in a third. Take the balls out of the freezer. Heat about 3/4 inch of oil in a large frying pan (https://amzn.to/4dsypB5). Dip the broccoli balls into the flour, then the egg, then the breadcrumbs and place in the heated oil. Continue with all of the balls turning them often to cook evenly on all sides. Once done, remove from pan and place on a paper towel to drain some of the oil.


Enjoy, but be careful, the inside is super hot!!!!


You can use fresh broccoli instead of frozen if you prefer. Just cut the broccoli into florets, blanch, cool, and chop into small pieces. I use frozen as it has less steps!!
