Cheesy Bacon Gnocchi Soup

1 package of bacon
1 tbsp margarine
1 onion
2 carrots
4 cups chicken broth (https://amzn.to/4fsFouL)
1 tsp salt (https://amzn.to/3ObUtoM)
1 tsp pepper
1 tsp garlic powder (https://amzn.to/3ObUtoM)
1/4 tsp thyme (https://amzn.to/3YKNpnM)
1/2 tsp chili flakes (https://amzn.to/3OvFLJr)
2 cups heavy cream
2 cups shredded cheese
Gnocchi (recipe on this site)
Green onion (optional)
Cook the bacon until crisp and set aside.
In a large saucepan, melt the margarine and then cook the onions and carrots until tender (about 5 minutes). Add the chicken broth and let simmer . Once the vegetables are soft, turn the heat to medium low and add the heavy cream and spices. Do not bring to a boil, but let simmer for 10 minutes.
Remove from heat and slowly add the cheese in small batches. (if the soup is too hot the cheese will clump)
Stir until the cheese is melted, then add the gnocchi and bacon and let heat through.
Enjoy with some green onions or just as is!!
