Breakfast Casserole

4 - 5 grated potatoes

1 - 1/2 cups diced ham

sliced green onion

1 red pepper

5 eggs

1 can evaporated milk

1 tsp Montreal steak spice (https://amzn.to/3Xmvmn1)

1 tsp red pepper seasoning (https://amzn.to/3XcTEQk)

salt and pepper

Grated cheese (optional)


Mix the grated potatoes together with the green onion, red pepper, ham, and spices. Pour into a large casserole dish. (https://amzn.to/3zaRWao)


Beat the eggs with the evaporated milk and some salt and pepper. Pour the egg over the potato mixture.


Bake at 350 for about an hour or until the potatoes are cooked. You can top with cheese if desired.
