Blueberry Bran Muffins

1 1/2 cups wheat bran (https://amzn.to/475hzGb)

1 cup buttermilk**

1/3 cup vegetable oil

2/3 cup brown sugar (https://amzn.to/3X4dNYZ)

1 egg, beaten

1 cup flour

1 tsp baking soda (https://amzn.to/3MvUra4)

1 tsp baking powder (https://amzn.to/3ZoFkav)

1/2 tsp salt

1/2 - 1 cup frozen blueberries


Mix together the bran and buttermilk and set aside and let stand for 5 minutes.


In a separate bowl, blend the flour, baking powder, baking soda, and salt. Gently fold in the frozen blueberries.


To the bran mixture, stir in the vegetable oil, brown sugar, vanilla and beaten egg. Add the dry ingredients to the bran mixture and mix just until blended.


Place into greased muffin tins (https://amzn.to/4ghfzPk) and bake at 350 for 15-20 minutes.


** I never have buttermilk in the house, but you can use regular milk and add a tablespoon of vinegar to get the same result.
