Beef Enchiladas

1 pound ground beef
8 large soft tortillas
1 chopped onion
1 chopped bell pepper
1/4 tsp salt
1/4 tsp pepper
2 cloves minced garlic
2 cups grated cheese
Sauce:
2 tbsp oil
2 tbsp flour

1/4 tsp cumin (https://amzn.to/48vyqTh)
2 tbsp chili powder (https://amzn.to/3AncHjK)
1/4 tsp oregano (https://amzn.to/3YABZmq)
1/4 tsp salt
1/4 tsp pepper (https://amzn.to/48yucdo)
2 cups water
For sauce, whisk together oil and flour over medium heat. Add tomato paste and seasonings. Slowly add water while stirring constantly. Simmer and cook for 10-15 minutes until sauce thickens. Remove from heat.
Cook ground beef with onions, garlic and peppers. Add 1/4 cup of the enchilada sauce.
Lay out the tortillas. Spread some beef mixture into center of each one. Add grated cheese and roll up the enchiladas.
In a greased 9 x 13 pan (https://amzn.to/3Ywg7sr), place the rolled enchiladas seam side down. Pour the remainder of the sauce over them and top with grated cheese, Bake at 350 for 20-25 minutes. Cool slightly and enjoy!!
