Beef Barley Soup

1 pound ground beef

1 cup barley (https://amzn.to/4aFUoT7)
2 large carrots
2 large potatoes
1 tsp pepper
1 tsp seasoning salt (https://amzn.to/3wHg17y)
1 1/2 tsp garlic powder
2 cups beef broth*
8 cups water
Cook ground beef in a 6 quart pot on medium high until no pink remains.
Drain fat.
Add all ingredients to the pot and bring to a boil. Lower heat to medium and let cook for approximately 35 - 45 minutes, stirring occasionally, until the barley and vegetables are cooked.
*I make my own beef broth using 2 cups of water and two beef bouillon cubes (https://amzn.to/3UJG0mQ). Add boiling water to the cubes and stir until dissolved before adding to the pot. It's great to have these on hand and they last much longer than the liquid broth.
This soup freezes well. You just may need to add more water to it when it gets reheated.
